Best milk chocolate to use for fudge making.
- pure milk chocolate bars, blocks, or chips
- Pure milk chocolate will have cocoa butter and some form of milk listed in the ingredients.
- Milk Chocolate is sweet and creamy and has a mild chocolate flavor.
- I personally love using Peter's Ultra Milk Chocolate. It has a lovely delicate chocolate flavor with slight caramel notes.
- This is the milk chocolate I use for all of my candy making. It is available in 10 pound bars or 50 pound cases. If you love milk chocolate and plan to make a lot of fudge, then purchasing one of these bars will be totally worth it.
- Callebaut makes wonderful milk chocolate too which is available in callets (large chips) and smaller quantities. They also sell large bars, as well.
- Of the grocery store brands, I prefer Kroger Private Selection Milk Chocolate Chips but have also enjoyed making fudge using Hershey's Milk Chocolate Chips and Ghirardelli Milk Chocolate Chips.
- I personally love using Peter's Ultra Milk Chocolate. It has a lovely delicate chocolate flavor with slight caramel notes.
NOTE: Finely chop, grate, or shave chocolate bars in order for the chocolate to melt more quickly.

Preparing my pan.
- I prefer to line my pan with non-stick tin foil or parchment paper. The fudge is easy to remove from the pan and it allows for easy cleanup, but you can also...
- butter the bottom and sides of your pan
- spray the pan with cooking spray
Can I use other fudge recipes?
- Definitely! These turkeys would look cute using any of the following fudge recipes.
sweetened condensed milk
- This recipe calls for one 14-ounce can of sweetened condensed milk.
- Sweetened Condensed milk is milk that has been pasteurized and condensed (heated and cooked to remove most of the water) and sweetened with sugar.
- You can make your own homemade sweetened condensed milk or just buy cans at the grocery store.
- There are many brands of sweetened condensed milk and we have experimented with many national brands and store brands. Some brands are really thick, while others are a bit thinner. Either works fine in our easy fudge recipes.
- DO NOT use cans of Evaporated Milk for this fudge recipe.
- Evaporated milk is not sweetened and is not thickened with sugar.
- Some fudge recipes do use evaporated milk, but not this one!
Microwave Method:
- Blend together 16 ounces of milk chocolate chips (or finely chopped milk chocolate bars) and one 14-ounce can of sweetened condensed milk in a large microwave-safe bowl.
- Heat at 70% power for 90 seconds.
- Let the bowl sit in the microwave for 3 minutes.
- Remove the bowl and stir the chocolate until melted.
- If all the chocolate does not melt, let the bowl sit for another 3 minutes then stir again.
- Only if needed, heat for another 15 seconds at 70% power and repeat the process above.
- Spread the thick fudge into a prepared pan, cover, and chill for about 3 hours until the fudge is set.
Stovetop Method:
- Stir 16 ounces of milk chocolate and 14 ounces of sweetened condensed milk together in a saucepan.
- Heat over low heat, stirring often, until about 75% melted.
- Remove from heat and let sit for 3 minutes.
- Stir until all the chocolate melts.
- If needed, let the milk chocolate fudge rest, allowing the residual heat from the melted chocolate to melt any remaining chips or chunks.
- If all the chocolate still doesn't melt, return the pan to low heat and heat for about another minute to warm the fudge.
- Remove and stir.
- Pour into an 8-inch or 9-inch square pan.
- Then cover the fudge and chill until firm, about 3 hours.
Cut into squares.
- Remove the fudge from the pan and peel off the tin foil or parchment paper.
- Cut the fudge into 16 squares.
- To make really nice looking squares, cut the curved edges off the fudge before cutting it into squares.

Decorate:
- Use a food-use-only paintbrush to paint an orange beak and a red wattle in the center of each square of fudge.
- Dip the paintbrush into orange candy melts then paint a triangle-shaped beak in the middle of a square of fudge.
- Then dip another paintbrush into the red candy melts and paint a teardrop-shaped wattle next to the beak.
- Freeze for 2 minutes until the candy melts harden.
- I recommend you decorate a piece of fudge then put that piece in the freezer. This will ensure a nice shiny surface on your candy melts. If the candy melts dry at room temperature then you place the fudge in the freezer, your candy melts might become spotty.
- Attach two large candy eyes to the fudge above the beak and wattle using candy melts.
- Repeat decorating a total of 16 fudge turkeys.
