Pretty pastel pink fudge topped with a swirl of blue is flavored to taste like cotton candy. This fun cotton candy fudge is a perfect treat to serve at a carnival or circus themed party but is easy enough to make for an afternoon snack.

If you love cotton candy then you are going to go nuts when you taste this sweet fudge. It melts on your tongue just like the classic carnival candy floss and tastes so good!

When I started experimenting with this fudge I was able to get the flavor profile I wanted just by adding a splash of cotton candy flavoring to our classic vanilla fudge recipe which is made with white chocolate and sweetened condensed milk.

When I took the first bite of the cotton candy fudge I felt as though I was walking around a carnival with a cone of the sweet candy floss.

The flavor was so fun that I wanted to fudge to look equally as festive.

I marbled the pink and blue fudge together in my first batch. Then I layered the blue fudge on top of the pink fudge. Both trays of fudge looked good but neither gave me that carnival feel.

The third time was the charm. I imagined cotton candy being made, with the paper cone swirling around the bowl while the sugar floss wraps around it, and decided a blue swirl on top of the pink fudge would give this fudge that fun look I wanted.

It’s easy to make too! Start by making a simple 2-ingredient white chocolate fudge then add a splash of cotton candy flavoring and some food coloring. In about 10 minutes you will have a tray of delicious cotton candy fudge.

Ingredients:

  • 18-21 ounces white chocolate
    • Use finely chopped bars, White Chocolate Chips, or white confectionery coating wafers (Candy Melts, Candi-Quik, Mercken’s, Peter’s, or Ghirardelli White Melting Wafers).
    • NOTE: confectionery coatings will firm up more than pure white chocolate so you will need to adjust the quantity used depending on what you are using to make this cotton candy fudge. Just check the ingredients on the back of the package to know which to use.
      • If using white confectionery coating or white chips that do not contain cocoa butter, use 18 ounces. I use Nestle Premier White Morsels and they do not have cocoa butter in them so I use 18 ounces.
      • If using pure white chocolate, with cocoa butter listed in the ingredients, then use 21 ounces.
  • 14 ounces (1 can) sweetened condensed milk
  • 1 teaspoon cotton candy flavoring
  • food coloring – white, pink, blue*
  • *NOTE: Adding white food coloring will help to tone down the yellow (cream color) of the white chocolate allowing you to get a pretty pink (instead of an orange/pink) and a nice light blue (instead of a teal) colored fudge. You can skip it, but your colors won’t be as true.

Instructions:

  1. Line an 8-inch square pan with non-stick tin foil or parchment paper.
  2. Stir together the white chocolate and sweetened condensed milk in a large microwave safe bowl and heat at 70% power for 90 seconds.
  3. Let the bowl rest in the microwave for 3 minutes before stirring. This allows the heat in the bowl to help melt all the chocolate evenly.
    • Alternatively, you can melt the white chocolate and condensed milk in a saucepan or preferably a double boiler set over low heat on the stove until 75% of the chocolate is melted then remove from the heat and let rest for 3 minutes before stirring until melted.
  4. Stir in the cotton candy flavoring.
  5. Color with white food coloring.
  6. Spoon about 3 tablespoons of the warm fudge into a small bowl and color that using blue coloring.
  7. Color the remaining fudge using pink food coloring.
  8. Pour the pink fudge into the lined pan and spread into an even layer.
  9. Spoon the blue fudge into a disposable pastry bag or a small zip top bag and snip off a tip.
  10. Pipe 16 swirls of blue fudge onto the pink fudge.
  11. Cover with plastic wrap or tin foil (don’t allow the wrap to touch the fudge) and either set aside at room temperature for at least 4 hours until firm or chill in the refrigerator for 2-3 hours until firm.
  12. When ready, peel off the tin foil or parchment paper from the bottom of the fudge and cut the fudge into 16 squares.

NOTE: If you want smaller pieces of fudge, then pipe on smaller swirls of the blue fudge.
