Feel free to adjust the spices to your preference! Not a big ginger fan? Reduce the amount. Love cinnamon? Add a bit more! 

The decoration on top is completely optional.

ingredients for gingerbread fudge:

  • 3 cups (18 ounces) white chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 1 tablespoon molasses
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • pinch salt 

*Please note, the recipe here uses Nestle-brand white “morsels,” which is actually confectionery coating. If you’re using white confectionery coating chips (no cocoa butter listed in the ingredients), use 18 ounces. If using pure white chocolate (with cocoa butter listed in the ingredients), use 20 ounces.

instructions:

Line an 8-inch  square pan with non-stick tin foil or lightly-greased regular foil or parchment paper. 

 

Microwave Method:

  • Place the white chocolate and sweetened condensed milk in a large microwave-safe mixing bowl.

  • Heat at 70% power for 90 seconds.
  • Then remove and stir.
  • Heat for an additional 45 seconds at 70% power then let the bowl sit in the microwave for about 3 minutes.
  • Remove the bowl and stir until all of the chocolate melts.
  • Stir in the molasses, spices, and pinch of salt.

  • Pour the fudge into the prepared baking pan, spreading evenly. 
  • Refrigerate about 3 hours until firm. 

 

  • Cut into 16 or 25 squares. 
  • If desired, add decoration. 

 

Stovetop Method:

To make this easy fudge on the stovetop you will need to create a double boiler by filling a large pot with 1 inch of water and setting a snug-fitting bowl over the top. The bowl should not touch the water. 

  • Pour the white chocolate and the sweetened condensed milk (and a pinch of salt, if using) into the bowl set over the pan of water. 
  • Set the double boiler over low heat and allow the mixture to begin to melt.
  • Stir it often until about 75% of the chocolate is melted.
  • Then lift up the bowl and wipe off any steam from around the bottom of the bowl. 
  • Set the bowl of fudge on your work surface and let it rest for about three minutes.
  • Mix the chocolate and sweetened condensed milk mixture very well. 
  • Add the molasses, spices and salt.
  • Scrape the fudge evenly into the prepared pan. 
  • Refrigerate about 3 hours until firm.
  • Cut into 16 or 25 squares. 
  • Add decoration if desired.

How to pipe icing on the fudge

Prepare royal icing and tint with white food coloring, or use store-bought frosting. You may also melt some white chocolate chips. 

Scrape the icing or chocolate into a decorating bag and snip about 1/4-inch from the tip.

Pipe designs on top of each piece of fudge.
