This easy root beer float fudge combines the classic flavors of the vintage treat: Root beer and vanilla!

Root beer float fudge is a delicious version of the classic! Did you know root beer floats were created by Frank. J. Wisner, owner of Colorado’s Cripple Creek Brewing, in August 1893.  Wisner thought the snowy peaks on Colorado’s Cow Mountain looked like ice cream floating in soda.  Our fudge combines the unique flavor of root bear with the creamy taste of vanilla ice cream.

Have you ever had a float? To make a root beer float, place two scoops of vanilla ice cream in a tall glass. Slowly poor root beer over the ice cream. Pop in a straw and enjoy!  Now let’s make some fudge!

For this fudge, you’ll need root beer extract. Many supermarkets carry an assortment of extracts, or you can purchase it online.

ingredients for root beer fudge:

  • 2 2/3 cups (16 ounces) white chocolate chips* 
  • 14 ounce can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon root beer extract 
  • pinch salt (optional)

Please note, the recipe here uses Nestle-brand white “morsels,” which is actually confectionery coating. If you’re using white confectionery coating chips (no cocoa butter listed in the ingredients), use 16 ounces. If using pure white chocolate (with cocoa butter listed in the ingredients), use 24  ounces.

Line an 8-inch  square pan with non-stick tin foil or parchment paper or grease well with butter or baking spray. 

I like to line my pans for easy removal. If you grease your pan you’ll probably need to cut the fudge in the pan. 

 

Microwave Method:

  • Stir together the white chocolate with sweetened condensed milk in a large microwave-safe mixing bowl.

  • Heat at 70% power for 90 seconds.
  • Then remove and stir.
  • Heat for an additional 45 seconds at 70% power then let the bowl sit in the microwave for about 3 minutes.
  • Remove the bowl and stir until all of the chocolate melts.
  • Pour about half of the mixture into a separate bowl.

  • Stir the vanilla extract and a pinch of salt into one of the bowls. Stir the root beer extract into the other mixture.
  • Scrape the root beer fudge evenly into the prepared pan. 
  • Scrape the vanilla fudge evenly on top. 
  • Refrigerate about 3 hours until firm.
  • Cut into 25 squares.

Stovetop Method:

To make this easy fudge on the stovetop you will need to create a double boiler by filling a large pot with 1 inch of water and setting a snug-fitting bowl over the top. The bowl should not touch the water. 

  • Pour the white chocolate and the sweetened condensed milk into the bowl set over the pan of water. 
  • Set the double boiler over low heat and allow the mixture to begin to melt.
  • Stir it often until about 75% of the chocolate is melted.
  • Then lift up the bowl and wipe off any steam from around the bottom of the bowl. 
  • Set the bowl of fudge on your work surface and let it rest for about three minutes.
  • Then stir until all the chocolate has melted.
  • Pour about half of the mixture into a separate bowl.
  • Stir the vanilla extract and a pinch of salt into one of the bowls. Stir the root beer extract into the other mixture.
  • Scrape the root beer fudge evenly into the prepared pan. 
  • Scrape the vanilla fudge evenly on top. 
  • Refrigerate about 3 hours until firm.
  • Cut into 25 squares.

    Can I use Loranns root beer oil? And if yes, how much?

      Hi Tricia,
      Yes, you can use the root beer oil. It is approximately twice as strong as root beer extract so I’d start by adding half. Then taste the fudge and adjust it from there. Enjoy!
