Stir together the white chocolate with sweetened condensed milk in a large microwave-safe mixing bowl.
Heat at 70% power for 90 seconds. Then remove and stir. Heat for an additional 45 seconds at 70% power then let the bowl sit in the microwave for about 3 minutes. Remove the bowl and stir until all of the chocolate melts.
Pour about half of the mixture into a separate bowl.
Stir the vanilla extract and a pinch of salt into one of the bowls. Stir the root beer extract into the other mixture.
Scrape the root beer fudge evenly into the prepared pan. Scrape the vanilla fudge evenly on top.
Refrigerate about 3 hours until firm. Cut into 25 squares.
Please note, the recipe here uses Nestle-brand white “morsels,” which is actually confectionery coating. If you’re using white confectionery coating chips (no cocoa butter listed in the ingredients), use 16 ounces. If using pure white chocolate (with cocoa butter listed in the ingredients), use 24 ounces.
You may also melt the chocolate and sweetened condensed milk on the stove-top in a double boiler.
