Soft caramel fudge speckled with chopped dried apple rings is easy to make using white chocolate and Dulce de Leche.
Line an 8-inch square baking pan with non-stick tin foil or lightly greased parchment paper.
Stir together the white chips and Dulce de Leche in a large microwave-safe mixing bowl.
Heat in the microwave at 70% power for 90 seconds.
Let the bowl rest in the warm microwave for 3 minutes.
Remove and stir until melted.
If the white chips have not completely melted, let rest for 3 more minutes, then stir again.
If needed, heat for 15 seconds at 70% power, then let rest in the microwave for 3 minutes before stirring until melted.
Reserve about 3 tablespoons of chopped apples then stir the rest into the fudge mixture.
Spread the caramel apple fudge into the prepared pan.
Sprinkle the reserved apples over the top of the fudge.
Press the apples into the fudge to ensure they stick.
Cover and chill in the refrigerator for at least 2 hours until firm, or set aside and let the fudge cool at room temperature for at least 4 hours until firm.
Remove from the pan, peel off the tin foil, and cut into 16 squares.
