This creamy white chocolate fudge is speckled with tart dried cranberries and will make a great addition to your candy platters for Christmas.
Roughly chop the dried cranberries.
Heat the white chocolate chips in the microwave for 30 seconds on high power.
Remove and stir in the sweetened condensed milk.
Heat at 70% power for 90 seconds.
If the white chips are not all melted, repeat the process above, only heating for 15 seconds at 70% power.
Alternatively, you can melt the white chips and sweetened condensed milk in a saucepan on the stovetop over low heat. Remove when about 75% melted, let rest a few minutes, then stir until melted.
Reserve about 3 tablespoons of dried cranberries to sprinkle over the top of the fudge, then stir the rest into the fudge.
Pour the fudge into the lined baking pan then sprinkle the reserved cranberries over the top of the fudge.
Chill in the refrigerator for about 2 hours or until firm. Or, set aside at room temperature to cool and firm up for at least 4 hours.
Cut into 25 squares.
