Cake batter flavored fudge loaded with rainbow sprinkles makes a festive treat for a birthday party or any celebration.
Line an 8-inch square pan with non-stick tin foil or parchment paper.
Stir together the white chocolate chips and the sweetened condensed milk in a large microwave mixing bowl.
Heat on 70% power for 1 minute and 20 seconds.
Let the bowl rest in the warm microwave for 3 minutes.
Remove and stir until melted.
If needed, heat for 10 second bursts of 70% power, stirring after each, until melted.
Stir in the cake batter flavoring and about 1/4 cup of the sprinkles.
Spread the fudge into the prepared pan.
Toss the remaining sprinkles over top and gently press them down into the fudge using your hand.
Cover the fudge and either set it aside in a cool (72 degrees F or less) room for about 4 hours or chill in the refrigerator for 2-3 hours until the fudge feels firm.
Remove from the pan and peel off the tin foil or parchment paper.
Cut into 36 squares.
Store in an airtight container at room temperature for up to 3 weeks.
